Spring Snack
If you can get your hands on it, lamb’s ear is in season right now! Harvest the younger inner leaves especially — this dish is called “lambari” because of the final result looking like a common fried-fish snack in Brazil. They are also sometimes call “garden goldfish.” Despite all of this, the taste isn’t fishy as you might start wondering, but mild and slightly vegetal. Try it for a fun Spring Snack!
